1.5 sticks of unsalted butter, room temperature
3/4 cup sugar
1 egg, room temperature
2 tsp vanilla extract
2 1/4 cup all purpose flour
1 tsp baking powder
1/4 tsp kosher salt
Optional: 1 Tsp Coffee Break spice blend
Optional: 2 Tbsp ground espresso
1. Preheat oven to 350º F/180º C, and prepare 2 bowls.
in bowl #1 mix the soft butter and sugar by hand or with your mixer, until fully combined. Add a beaten egg and vanilla extract and mix well.
2. In bowl #2, add the all-purpose flour, baking powder, and the kosher salt. If you’re using our amazing Coffee Break spice blend or ground espresso, add either to this second bowl.
Note: You can always make both! Simply split the ingredients or just double the recipe! Promise they wont last very long.
3. Mix both bowls until you get a cohesive dough. Prepare a baking sheet with parchment paper and form your cookies: either place a spoonful of your mixture and don’t worry too much about how they look! Otherwise, form a ball in your hands and then press it down a bit, not too much. Make sure you leave enough room between cookies for them to expand.
4. Place cookies in your preheated oven for 10-15 min. The time will depend on your oven and the size of your cookies. For spoon size, it’s usually around 12 minutes but check after 10. They will still feel soft but slightly brown at the bottom.
5. When the cookies are ready, remove them from the oven and cool on a rack. Enjoy!
Note: Don’t over bake. Cookies are always soft when they’re warm. Little brownish bottom is enough.
