1 Kg Potatoes (Yukon is a great choice, or red skin)
1/4 cup Olive oil
Salt
3-4 Tbsp “Potayto Potahto” Spice Blend (or make your own)
Optional: 2-4 garlic cloves
Garnish: shopped parsley
1. Preheat your oven to 400º F (200º C)
2. Scrub your potatoes with a vegetable scrub, or if you prefer, peel completely, and cut into your favorite shape: 1/2 inch slices or 2 inch cubes. Do your best to be consistent so they will cook in the same time.
3. Place all potatoes in a large bowl, cover with olive oil, add a generous amount of your spice blend and salt to taste. Remember – potatoes LOVE salt (The blend already has salt, but very little). If you choose, add a few finely minced garlic cloves.
4. If you want less cleaning later, clover your baking sheet with baking paper, and spread all the veggies evenly. If you double or triple the recipes consider using 2 trays.
5. Roast for 30-40 minutes (depending on your oven), giving it a good toss mid through the cooking process.
Note: to add some color and even more fresh flavor, garnish with finely chopped parsley.
