Quick and Easy Mediterranean Fish Bites: A Flavor-Packed Weeknight Dinner

By fillets
Cod cut into 1.5 inch cubes (or use other meaty fish)
Olive oil
Grill Thrill spice blend
Salt
Butter/ghee/cooking goil
Lemon
Parsley for garnish
1. Pat dry your fish with paper towel and cut into cubes, not to small, about 2″.
2. Mix in a bowl with some olive oil, spice blend, and a pinch of salt
3. Heat up non-stick pan to medium heat.We love using the cast iron, which is naturally non-stick, but give it some time to warm up.
4. Add a bit of oil, butter or ghee, place your fish, with space between the pieces for about 2 min on each side, until it’s which in the middle.
5. Remove from the pan, and garnish with some chopped parsley and lemon slices.
Note: Don’t be tempted to over cook – it continues to cook a bit after you remove it from the pan.
