Lettuce, tear with your hands
1/4-1/2 red onion, sliced thin
Cucumber, half rounds
Cherry/grape tomatoes, quartered
(or regular tomatoes- sliced)
Sugar snap peas, or other crunchy veggie
(thinly sliced carrots would be great too!)
1/2 or 1 cup of pitted olives
(black and/or green, sliced)
1/4-1/ 2 cup feta cheese
Vinaigrette:
1/4 cup Red wine vinegar
(white is also fantastic!)
3/4 cup Olive oil
1 garlic clove, squashed
1 lemon, juiced
1 Tbsp dry oregano
1 Tbsp dry parsley
1 tsp salt
Pinch ground pepper
1/4 cup feta cheese
1. Cut and place all the veggies, including the olives and feta cheese, in a large bowl.
2. Place all the vinaigrette ingredients in a bowl and mix well with a whist or pulse in a blender.
3. JUST BEFORE SERVING – mix the vinaigrette with the salad and serve.
