1 small onion (1 cup)
1-2 inch ginger, peeled (about 1 Tbsp)
2 garlic cloves
2 Carrots
1 Roma (plum) tomato,
1 can Garbanzo Beans (chickpeas)
1 Tbsp tomato paste
1 cup of water
2 Tbsp Holy Chole Spice mix
1/4 cup parsley, chopped
Olive oil
Salt and pepper
Garnish: chopped parsley
1. Prepare 3 bowls:
In bowl #1: Finely chop the onion and ginger. Smash and roughly chop the garlic and add to your first bowl.
Bowl #2: Chop the carrots to small cubes
Bowl #3: roughly chop the Roma tomato.
In addition, strain and rinse the garbanzo beans.
2. Place a pan or a small pot on medium heat (size up if you’re doubling/tripling the recipe). Cover the bottom with some olive oil, and sauté bowl #1 with the onion, ginger, and garlic. Make sure it’s not too hot so they don’t crisp or brown too fast. Add, salt and pepper, and cook until translucent, soft, a little crispy, and smelling amazing – about 8 minutes.
3. Add the carrots and cook for a few minutes. Then, add the chickpeas, and after another 2-3 minutes add the tomatoes and mix well.
4. Add the tomato paste with 1 cup of water, stir, and cook for another 2 minutes.
5. Add the Chole Spice blend and mix well. Lower the flame to low, and slowly simmer uncovered for about 20 minutes until thick.
6. Taste for salt, and add gradually if needed. If you find it too thick, add a bit of water, but taste again, you may need a bit more salt and/or spice mix.
Plate and top with some chopped parsley. Enjoy on its on, or over white rice.
